Backyard Banana Bread





Here's an old recipe that has been in the family for years and is tried and true.
It is a moister banana bread, which is how we prefer it. We're from an area where you can harvest bananas from your backyard.

These bananas tend to be sweeter than the store's. What a great way to use your backyard bananas.


Banana Bread Recipe




 

Ingredients:

1/2 cup butter - softened
1 cup sugar
2 beaten eggs
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder (we use a non alumium baking powder brand)
2 cup flour
3 large mashed bananas

Optional - 1/2 cup chopped nuts (we like pecans) and 1/2 cup raisins

Bake at 325 for 45 min to an hour.  Cook time will vary depending on your oven and altitude.



This bread keeps well if you'd like to pre-slice it and store in the freezer for the odd times when someone wants a slice for breakfast. We take it out of the freezer and toast in a toaster. (use tongs to remove from toaster). It toasts up nicely and is great with salted butter.
